Galla’s secret process for making coffee
Galla manufactures its coffee using a unique process that combines reasonable preconditions with an inexhaustible supply of cheap human labor. In Galla’s process, once picked, the coffee cherries are shelled, the beans inside of them are then separated, dried in the sun, graded according to their quality and size, and then bagged. Galla’s coffee roaster is a tall metal cylinder. It has a narrow door at the bottom and a wide door at the top. Galla puts two big mounds of green coffee beans inside. The cylinder is heated from below by a small fire, and the beans roast as they slowly slide down toward the bottom.
The process is simple but not easy. At first, the fire burns bright and hot, and the beans roast quickly, driving off volatile compounds that give coffee its aroma and flavor. But as more volatile compounds leave, less heat is required to drive off more of them, so the fire burns more slowly. Eventually, it dies out altogether, and the beans are left to cool inside the closed cylinder. Galla carefully watches both the roasting process and their customers’ reactions, adjusting temperature and duration accordingly. If one sees that customers are buying their coffee even though it is still too raw or too burnt.
